Ingredients
  

  • 2 x 100g packets frozen unsweetened acai puree or 4 tablespoons acai powder
  • 2 large ripe bananas peeled, sliced, and frozen
  • 120 ml unsweetened almond milk or any milk of your choice
  • 1 tablespoon honey or agave syrup
  • 1 tablespoon chia seeds
  • 1/2 teaspoon vanilla extract
  • Pinch of sea salt
For the topping: 60g granola (use gluten-free if needed)
  • 100 g fresh mixed berries strawberries, blueberries, raspberries
  • 1 small banana sliced
  • 2 tablespoons coconut flakes toasted
  • 1 tablespoon hemp seeds
  • Edible flowers or micro-greens optional, for that wow factor

Method
 

  1. Prepare the acai base: If using frozen acai packets, run them under warm water for a few seconds, then break them into chunks. Place the acai chunks, frozen banana slices, almond milk, honey, chia seeds, vanilla extract, and salt into a high-speed blender. The mixture will look quite stiff at first — that’s exactly what you want.
  2. Blend with care: Pulse the blender a few times to break everything down, then use a tamper to push the ingredients into the blades. Blend on low to medium speed, scraping down the sides as needed. You are aiming for a thick, scoopable consistency that holds its shape — it should look like soft-serve ice cream, not a drinking smoothie. The colour will be a deep, vibrant purple, and the smell will be intensely fruity.
  3. Check the texture: Stop blending once the mixture is completely smooth and creamy. If it is too thick to blend, add a tablespoon more almond milk at a time. If it becomes too thin, add a handful of frozen banana or ice cubes. The final texture should be thick enough that a spoon stands upright in the centre.
  4. Chill your serving bowls: While the base is resting, pop your serving bowls into the freezer for five minutes. A cold bowl helps keep the smoothie base firm and prevents the toppings from sliding off. This is a small touch that makes a big difference in presentation.
  5. Assemble the bowl: Divide the thick acai base evenly between the two chilled bowls. Use the back of a spoon to create a gentle swirl or a flat, even surface. The base should be smooth and glossy, with a texture that looks almost like a thick, frozen mousse.
  6. Arrange the toppings artfully: Start with the granola, placing it in a neat pile or a ring around the edge. Next, arrange the fresh berries and banana slices in small clusters or a fan pattern. Sprinkle over the toasted coconut flakes and hemp seeds. For the final flourish, add a few edible flowers or micro-greens in the centre — this is the trick that transforms it from a simple breakfast into a stunning centrepiece.
  7. Serve immediately: Present the bowls straight away. The contrast between the cold, creamy base and the fresh, crunchy toppings is what makes this dish so special. Watch your guests’ eyes widen as they take the first spoonful.

Notes

For a thicker base, use frozen banana and add almond milk sparingly. Chill bowls before serving for best presentation. Toppings can be varied according to preference.
