- Preheat and Prepare: Preheat your oven to 180°C (350°F). Grease a 23cm (9-inch) round cake tin or a standard 23cm loaf tin, then line the bottom with a circle of parchment paper. The paper guarantees that the cake releases cleanly, leaving a pristine base for your presentation.
- Whisk the Dry Ingredients: In a large bowl, whisk together the flour, baking powder, bicarbonate of soda, salt, cinnamon, ginger, nutmeg, and cloves. You should smell the warm, aromatic cloud of spice rising from the bowl as you whisk. Set this aside.
- Combine the Wet Ingredients: In a separate large bowl, whisk the caster sugar, brown sugar, and oil together until they look smooth and glossy, almost like a thin caramel. Add the eggs one at a time, whisking well after each addition. The mixture will become thick and pale, and you will hear it change from a slosh to a slow, silky ribbon as it falls from the whisk.
- Add the Pumpkin and Vanilla: Stir in the pumpkin purée and vanilla extract. The batter will turn a deep, burnished orange, and the smell will shift from sweet to deeply autumnal. Don't worry if it looks a little curdled at first—the pumpkin will bring it all together.
- Fold in the Flour: Pour the dry ingredients into the wet mixture. Using a rubber spatula, fold gently until just combined. A few streaks of flour are fine; overmixing will develop the gluten and make the cake tough. The final batter should be thick, luscious, and smell like a bakery.
- Bake to Perfection: Pour the batter into your prepared tin and smooth the top with the spatula. - Cool Completely: Let the cake cool in the tin for 10 minutes. The warmth will make the cake fragrant and soft. Then turn it out onto a wire rack, peel off the parchment paper, and let it cool completely before decorating. Make sure to use pumpkin purée, not pumpkin pie filling. Allow cake to cool completely before frosting.
